Lavanya Bhandari
Lavanya Bhandari is the Founder and CEO of Ecoroots, a deep-tech company developing next-generation sustainable packaging from mycelium, the root structure of mushrooms. With a background in Food Science, Chemistry and Product Development, Lavanya has spent her career working at the intersection of food manufacturing, biotechnology, and circular manufacturing. Before founding Ecoroots, she worked across the food and FMCG sectors.
Today, she is pioneering how biomanufacturing and waste valorisation can transform waste/ by-products from food and agricultural industries into high-performance, compostable packaging. Headquartered in London with a facility in Cork, Ecoroots partners with industry and academia to scale bioprocesses using AI-enabled production and digital twin systems, setting new standards for traceability and circularity.
Lavanya's mission is to build scalable, sustainable infrastructure that bridges food, materials, and manufacturing ecosystems, driving both environmental and economic resilience.
