Liquefaction
Liquefaction is a key process in the production of ethanol, beer, starch-based sugar and so on. At the beginning of liquefaction, the slurry viscosity turns out to be quiet high because of starch gelatinization, which makes it hard to deal with. LiqueStar is an excellent thermostable alpha-amylase, it can randomly hydrolyze 1,4 glycosidic bonds and breaks down the starch chain into soluble dextrin and oligosaccharide, so as to rapidly reducing the viscosity of mash and convert it into liquid.
