Vital wheat gluten, also known as active gluten powder or wheat gluten protein, is a natural protein extracted from wheat (flour). It is light yellow in color and has a protein content as high as 75% to 85%, making it a nutritious plant protein resource. It has the properties of viscosity, elasticity, extensibility, film-forming ability and fat absorption. Vital wheat gluten is an excellent dough conditioner. It is widely used in the production of bread, noodles and instant noodles, and can also be used as a water-retaining agent in meat products. It is also a basic raw material for high-end aquatic feed. At present, in China, vital wheat gluten is still regarded as an efficient green flour enhancer and is used in the production of high-gluten flour and bread-specific flour, with no restrictions on the addition amount. Vital wheat gluten is also an effective way to increase the plant protein content in food.
