Glutinous rice flour is rice flour created from short-grain or long-grain sweet glutinous rice grains. This staple Asian ingredient has a subtly sweet and milky taste. It tastes sweeter than other types of flour. It is also known as Sweet Rice Flour or Shiratamako in Japanese. Due to the rise of gluten-free diets, it has emerge as a great alternative to wheat flour, tapioca starch and potato starch. It has a neutral flavour and is very starchy when used. Most people use glutinous rice flour to make mochi and other sweet desserts.
