Dornesha 5022 is a modified tapioca starch with medium-high viscosity and high resistance to temperature , low pH, salt and shear. It has acceptable freeze/thaw stability. 5022 modified starch is suitable for use in yogurt, sauces, dairy desserts and canned foods
