The P10S series continuous grinding and refining system has been specially designed to grind and refine chocolate, compounds, fat creams and spread creams in a single step, representing a major innovation in terms of process simplification, space and energy saving.The system consists of three grinding units in series, respectively a pre-refiner with two horizontal cylinders, a refiner with vertical cylinders and a ball refiner, which guarantee an optimal fineness result and a correct particle size distribution with a moderate Gaussian curve, to obtain a product with favourable rheological characteristics. Refined chocolate or fat creams pass through the filtration units and are transferred to subsequent processing.All recipe parameters, referred to the various work groups that make up the system, can be set on the touch-screen control panel and managed by a PLC.The entire grinding and refining process, which is carried out continuously, without any contact between the product and the outside world, guarantees the utmost respect for the organoleptic characteristics of the product, by means of careful temperature control in the three grinding/refining stages.The internal mechanical parts are accessed by hinged doors, that facilitate maintenance and cleaning operations.
