As Imesta Food, we produce Alkalized Cocoa with great care. Alkaline cocoa powder is produced as cocoa that has been treated with an alkaline (basic) solution, such as potassium, which neutralizes the acidity and softens some of the harsh flavor (and gives it a deeper color). This modified cocoa powder model comes off the production line as Dutched Cocoa or alkalized cocoa. Compared to natural cocoa powder, alkalized cocoa powder is darker brown, has reddish undertones, is lighter in flavor and mixes more easily with liquids. Alkaline cocoa has an alkaline pH of 7 to 8, while natural cocoa powder has an acidic pH of around 5.
