Butter is an animal fat containing at least 80% fat. It is made from the cream that is created after the milk is spun. Its composition includes monounsaturated, short-chain fatty acids that are quickly metabolized, not accumulating in the body as adipose tissue. Butter is also a source of CLA, i.e. conjugated linoleic acid dienes, which have anti-cancer, anti-diabetic, anti-atherosclerotic and anti-inflammatory properties. Milk fat also contains phospholipids, which have a beneficial effect on the nervous system, memory, concentration and regeneration of the body. Application: dairy spread, fat blends, chocolate, sauces, confectionery, ice cream, ready meals, processed cheese.
