ANALOGUE CHEESE LINE
The steam cooker-stretcher is designed for the production of pasta filata cheese (mozzarella, buffalo mozzarella, pizza cheese) by using as raw material, cow or buffalo curd, fresh or frozen curd. It is also suitable for the production of analogue mozzarella by using as raw material, powders, rennet casein, starch and vegetable or animal fat. It can also be used for the production of processed cheese and cream cheese. Possibility to add flavors and spices. The curd could be introduced in the vat in block to avoid any pre/cutting. The process working is in batch to avoid any mistake in the cooking as the operator will respect the recipes given from Milkylab technician.
