Agar,also called Agar agar, is kind of hydrophilic colloid extracted from red algae. Generally it is white or pale yellow powder free of smell or taste. Agar can be dissolved in hot water and form a gel, with the features of high gel strength, high solidifification, good stability,etc. In terms of chemical structure, agar belongs to high molecular polysaccharide with the main content of galactose. Agar is widely used as thickener, coagulant, stabilizer, emulsififier, suspension agent among food,chemical and chemistry industry.
