A DUE technology for fermented drink production

A DUE S.p.A. supplies SYSTEMS for the preparation of a wide range of beverage, including FERMENTED DRINKS such as HARD SELTZER , but also Kombucha, Kvas, etc. Hard seltzers result from an alcoholic fermentation process involving a solution of water and sugar at 10 °Bx, where the glucose is converted in alcohol and carbon dioxide by a specific yeast strain. The sugar solution, before the yeast inoculation, is subjected to sterilization and then it’s cooled down to the fermentation temperature. The fermentation process can be controlled, by measuring the pH, the Bx degree or the alcohol percentage. When the desired alcohol content is reached, cooling and final filtration are carried out. This solution, consisting of only water and ethanol, is transferred to the preparation tanks and integrated with the desired aromas, sweeteners and any pH regulators.
